I pinned these wonderful 3-Cheese Enchiladas from my blogging friend, Linda of Parker’s Paradise, and have made them several times actually. Mexican food is my absolute favorite!
Not only have I made these for us several times, but this weekend, we were in Alabama visiting my brother and sister-in-law and we made them on Saturday for the whole gang. Actually we tripled the recipe to have enough for all of the family. Jason also made his version of rotel dip & chips to go along with it......my kind of dinner!
These enchiladas are easy and they’re SO good. Here’s what it takes for one batch which usually makes anywhere from 6-8 (usually about 7 for me) when I make them depending on how much I put on each tortilla. When we tripled the recipe on Saturday, it ended up making 22.
3-Cheese Enchiladas
Combine in a large bowl:
1 c. Monterey Jack cheese
1 c. cheddar cheese
3 oz. cream cheese
1/4 c. salsa
1 c. chopped peppers ( whatever ones you like ) (I used bell peppers)
1/2 c. chopped green onions (I used regular onions)
1 tsp. cumin
Mix well.
**NOTE FROM TAMMY** Optional: I also add a half a can of refried beans and a half a pkg of taco seasoning pkg. And I saute my bell peppers and onions because Jason likes them softened!**
Spread 1/4 c. mix onto each of flour tortillas. Place seam side down in a sprayed 9x13 pan. Top with cheddar cheese and 1/2 c. salsa.
Bake in 350' oven for 20 minutes.

The enchiladas look SO good..yummy!
Well, I am going to make those for cards or dominoes, whichever comes first. They sound delicious. I like easy too.
