Pinned it, Made it! Monday ~ Week 4 ~

Oh my! It’s hard for me to believe that it’s already time for Pinned it, Made it! Monday again. This week just flew by. I almost didn’t have anything to show. But……I do!

I pinned these wonderful 3-Cheese Enchiladas from my blogging friend, Linda of Parker’s Paradise, and have made them several times actually. Mexican food is my absolute favorite!

Not only have I made these for us several times, but this weekend, we were in Alabama visiting my brother and sister-in-law and we made them on Saturday for the whole gang. Actually we tripled the recipe to have enough for all of the family. Jason also made his version of rotel dip & chips to go along with it......my kind of dinner!

These enchiladas are easy and they’re SO good. Here’s what it takes for one batch which usually makes anywhere from 6-8 (usually about 7 for me) when I make them depending on how much I put on each tortilla. When we tripled the recipe on Saturday, it ended up making 22.

3-Cheese Enchiladas

Combine in a large bowl:

1 c. Monterey Jack cheese
1 c. cheddar cheese
 3 oz. cream cheese
1/4 c. salsa
1 c. chopped peppers ( whatever ones you like ) (I used bell peppers)
1/2 c. chopped green onions  (I used regular onions)
1 tsp. cumin

Mix well.

**NOTE FROM TAMMY** Optional: I also add a half a can of refried beans and a half a pkg of taco seasoning pkg.  And I saute my bell peppers and onions because Jason likes them softened!**

Spread 1/4 c. mix onto each of flour tortillas. Place seam side down in a sprayed 9x13 pan. Top with cheddar cheese and 1/2 c. salsa.

Bake in 350' oven for 20 minutes.

**These can be found on my "What's for Dinner" board on Pinterest.**

Now….it’s your turn! What have you pinned and made?

If this is you’re new to Pinned it, Made it! Monday, let me tell you what it is. It’s simply motivation and encouragement to share something that we’ve pinned on Pinterest and then actually followed through with! I’ve pinned way more things than I will ever hope to actually follow through with and make, use, or try, but hopefully by looking forward to sharing here with you on Mondays, it will help me along with my follow-through! I hope it will do the same for you! Besides, I can’t wait to see what YOU’VE been pinning and making! It can be anything you’ve pinned and actually followed through with, made, or tried………whether that be a recipe, a craft, a sewing project, a photography tip, a home decorating idea, organizational idea, home improvement project, exercise routine, household tips, a purchase, anything!

To participate in Pinned it, Made it! Monday, please take a moment to read and follow the guidelines :

1) Just do a post about what you’ve pinned and made from Pinterest, then come back over here to Country Girl at Home and link that particular post (not your blog in general) on this post below.
