Our Favorite Maple Syrup

Around our house, it's quite common for us to have breakfast for supper. As a matter of fact, we have pancakes and bacon much more often as supper than we do for breakfast. We also do breakfast casserole, eggs and biscuits or even chocolate gravy and toast for supper occasionally. For some reason, these breakfast-for-supper-meals are especially good in the winter...but we have it year round.

If we're in a big hurry, we sometimes use the boxed pancake mix (as we did last night). Joy was the official pancake cook last night....only one pancake ended up on the floor, so it was a pretty successful event I'd say. (I hope you aren't getting tired of seeing her picture on my blog...she's just always with me everywhere I go, everything I do...and such a willing subject for photos!)

But, there is really no substitute for our homemade pancake recipe and DEFINITELY no substitute for our own homemade syrup. If you ever try it....I don't think you'll ever want to buy syrup in a bottle again (unless you're one of those thick syrup lovers). This syrup is so yummy!

Pancakes

1 1/4 cups self-rising flour
1 Tbsp. sugar
1/2 tsp. salt
1 beaten egg
1 cup milk
2 Tbsp. salad oil

Stir until flour is moistened. Ready for cooking. (We usually double the recipe).

Maple Syrup

2 cups sugar
1 tsp. maple flavoring
1 cup water

Stir on stove until it becomes clear and begins to boil. Remove from heat and pour into appropriate container for serving.

Next time you're in the mood for pancakes, give this simple maple syrup recipe a try. I hope you like it as much as we do!

  6. Hi Tammy!
I'm sorry I am so behind...I was not a good blogger this week but I'm trying to catch up just a little! And I was just catching up with you as I scrolled down through the last couple posts....
First of all, your daughter looks like such a pro fixing breakfast- um, I mean dinner! ;) I'm just now letting my nine yr old do a few things by the stove- if she sees these pictures she'll be begging me to let her do more! :)
(We sometimes eat breakfast for dinner, too!)

I just loved seeing your scrapbooking pictures...those girls look so much alike- adorable!

In fact, I just showed scrapbooking pages on today's Show and Tell post! My girls have just started...I showed one of mine, but I am definitely not as good as you are at it!

    Have a great weekend!!!

  9. Tammy of course we're not getting tired of your little angel! We have to keep them around as long as we can, because they grow up faster than we can imagine. I would love breakfast for dinner as a matter of fact I was thinking few minutes ago what in the world should I make and you hit the nail right on the head. Now I don't have to go out because I have everything I need right here. I would try that maple syrup but I'll have to go out to get the flavoring so, I'll try it next time. Thanks again, for dinner. 12. We have breakfast for dinner all year too. Last weekend we had summer squash patties and turkey breakfast sausage. Sunday I am cooking corn waffles and bacon. I don't know if I can give up the real maple syrup we get around here for anything else though. It taste nothing like the stuff you get in the grocery store - this is the real deal. YUMMO!

And I am with the other gals - more on your stove!!

  16. We love breakfast for dinner as well! One of my friends told me about omelets in a ziplock back....just put all your ingredients for a single omelet in a small baggie, shake it up and throw them into a pot of boiling water all together and cook til done. Sounds like fun! Your blog looks great as always!

  21. Oh Tammy, I would never get tired of seeing your precious Joy. I think it is so wonderful to see her with you learning by her mother's side. Such a blessing for you both.

And those recipes sounds fabulous. I've never made my own syrup and I can't wait to give that a try. We just love breakfast for supper too! There is just something extra warm & cozy about it. Isn't there?

I am trying to catch up with my blog and was just reading some old posts. I would love for your & Joy to some sit on my porch with me! We live in Scotts Hill, TN, West Tennessee. How far is that from you?

    Smiles,
    Lea

PS ~ I noticed your little muffin tin with the candles. I remember your post about that and I did finally make one for myself. It is on my kitchen island and I just love it. I always think of you when I see it.
